I am always looking for new ways to prepare my family's favorite foods and this sandwich really does it for us. I slipped in whole grain Ciabattas, grilled chicken breasts, Swiss cheese, bacon, tomatoes, avocados, and topped it off with bold pesto mayo.

Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter ingredients as I cook. Therefore, it has always been a challenge when sharing recipes with others. I doubt I make dishes the same way twice. So, I advise you to use my recipes the same way. Trust your experience and adjust to your personal taste.

These are restaurant-quality grilled chicken sandwiches you can make at home. The chicken is pounded thin and is tender when grilled. It's delicious on the toasted ciabatta bun with gooey melted Swiss cheese and fresh toppings. On top is a basil pesto mayo that's simple to make.   • 4
    chicken breast halves, skinless and boneless (I pound chicken to 1/2 inch)
  • ·
    salt, pepper, granulated garlic, to taste
  • ·
    olive oil, extra virgin (to coat grill pan & brush on bread)
  • 4-8 slice
    Swiss cheese
  • 8 slice
    bacon, cooked to crispy
  • 1
    avacodo, sliced
  • 6
    tomato, sliced
  • 4
    ciabatta rolls, sliced

  • 2 Tbsp
    prepared basil pesto
  • 1/2 c
  • ·
    (combine pesto and mayonnaise in small bowl)

How to Make Grilled Chicken Breast Ciabatta w/ Pesto Mayo~Robynne


  1. Grill seasoned chicken breast in grill pan coated with olive oil until cooked through with nice grill marks; approx. 7-8 minutes per side.
  2. While chicken is cooking, brush rolls with olive oil. Place face up on a baking sheet.
  3. Broil until lightly toasted. Remove from oven and set the top of rolls aside.
  4. Place one chicken breast on the bottom halves of rolls and top each with 1-2 slices of cheese.
  5. Return to oven until cheese is melted and bubbly.
  6. Top with bacon, tomato, avocado, and pesto mayonnaise.
  7. Enjoy!
