I just couldn't do meat and sauce so this is my version of Sloppy Joe's. It is always a big hit with whoever I make it for. I always hear "I've never had sloppy joe's like this before.

Ingredients

  • 1 1/4 pounds ground beef (95% lean)
  • 1 medium yellow onion- diced
  • 1 large green bell pepper- diced
  • 1 pound crimini mushrooms –sliced
  • 5 sticks celery- sliced across 3/8”
  • 1 medium pasilla pepper- diced
  • 3 - bay leaves (fresh if available)
  • 15oz cans yellow corn
  • 15oz cans diced tomato
  • 15oz cans stewed tomato
  • 15oz cans tomato sauce
  • 3/4 cup dark brown sugar
  • 4 cloves garlic-minced
  • 1 tablespoon dried oregano
  • 2 tablespoons smoked paprika
  • 2 tablespoons dried basil
  • 1 teaspoon black pepper coarse grind
  • 1 teaspoon kosher flake salt
  • 6-8 - onion rolls
  • 4 tablespoons olive oil
  • 2 tablespoons corn starch
  • - pickled jalapeno slices (optional)

How To Make really sloppy joes-open faced

  • Step 1
    Brown beef in olive oil
  • Step 2
    Add remaining ingredients except for jalapeno, and corn starch
  • Step 3
    Cook 1 hour at simmer
  • Step 4
    Thicken to desired consistency as this is really a very wet sloppy joe with 2 tablespoons of corn starch and 2 tablespoons of water mixed into a slurry.
  • Step 5
    Sprinkle with Jalapeno Slices to taste
