A friend introduced me to this recipe about 20 years ago. Now I make it for pot lucks at work and it's always a big hit!

Slow Cooker Crock Pot

1 lb
ground beef, browned & drained
1 pkg
flour tortillas or corn tortillas, your choice
1 can(s)
green beans, drained and chopped
1 can(s)
corn, drained
1 can(s)
chopped green chiles
1 large
can refried beans
1 jar(s)
salsa, (we like chunky and hot)
1 or 2
jalapenos, fresh & chopped (optional)
1 pkg
taco seasoning mix
1 pkg
shredded cheddar cheese

1To the browned ground beef add the chopped green beans, corn, green chilies, refried beans, salsa, jalapenos and taco seasoning. Mix together until well blended.
2Spray crock pot with Pam, put some of the beef mixture on bottom, make a layer with the tortillas, another layer of meat mixture, and sprinkle with cheddar cheese (we like it cheesy), repeat layering until crock pot is full, ending with cheese.
3Cook on low for 4-5 hours. Serve with chopped tomatoes, sour cream, shredded lettuce, and more salsa if you want. We also like to add Crunchy Tortilla chips as a side.
