A friend introduced me to this recipe about 20 years ago. Now I make it for pot lucks at work and it's always a big hit!

prep time 15 Min
cook time 4 Hr
method Slow Cooker Crock Pot
yield 6-8 serving(s)

Ingredients

  • 1 pound ground beef, browned & drained
  • 1 package flour tortillas or corn tortillas, your choice
  • 1 can green beans, drained and chopped
  • 1 can corn, drained
  • 1 can chopped green chiles
  • 1 large can refried beans
  • 1 jar salsa, (we like chunky and hot)
  • 1 or 2 - jalapenos, fresh & chopped (optional)
  • 1 package taco seasoning mix
  • 1 package shredded cheddar cheese

How To Make mexican garbage can or mexican lasagna

  • Step 1
To the browned ground beef add the chopped green beans, corn, green chilies, refried beans, salsa, jalapenos and taco seasoning. Mix together until well blended.
  • Step 2
Spray crock pot with Pam, put some of the beef mixture on bottom, make a layer with the tortillas, another layer of meat mixture, and sprinkle with cheddar cheese (we like it cheesy), repeat layering until crock pot is full, ending with cheese.
  • Step 3
Cook on low for 4-5 hours. Serve with chopped tomatoes, sour cream, shredded lettuce, and more salsa if you want. We also like to add Crunchy Tortilla chips as a side.
