Mexican Garbage Can or Mexican Lasagna
1 lbground beef, browned & drained
1 pkgflour tortillas or corn tortillas, your choice
1 can(s)green beans, drained and chopped
1 can(s)corn, drained
1 can(s)chopped green chiles
1 largecan refried beans
1 jar(s)salsa, (we like chunky and hot)
1 or 2jalapenos, fresh & chopped (optional)
1 pkgtaco seasoning mix
1 pkgshredded cheddar cheese
How to Make Mexican Garbage Can or Mexican Lasagna
- To the browned ground beef add the chopped green beans, corn, green chilies, refried beans, salsa,jalapenos and taco seasoning. Mix together until well blended.
- Spray crock pot with Pam, put some of the beef mixture on bottom, make a layer with the tortillas, another layer of meat mixture, and sprinkle with cheddar cheese (we like it cheesy), repeat layering until crock pot is full, ending with cheese.
- Cook on low for 4-5 hours. Serve with chopped tomatoes, sour cream, shredded lettuce, and more salsa if you want. We also like to add Crunchy Tortilla chips as a side.
