300 calorie beef stew (easy & healthy)
This is such a great recipe that I've probably made dozens of times over the past 30 years. Ever have one of those recipes that the whole neighborhood can smell cooking? It's just that good and good for you, too. No heavy brown gravy and huge chunks of potatoes. And, it is very low cal, coming in at just under 300 calories per serving. Low & slow cooking is the secret here. It's so easy that you can have it in the oven in 10 minutes. Serve with a loaf of warm garlic bread and a dinner salad for a delicious (...and healthy) meal.

Ingredients
- 2 pounds beef stew meat
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/8-1/4 teaspoon black pepper
- 1/4 teaspoon thyme, dried
- 1/4 teaspoon marjoram, dried
- 1/4 teaspoon rosemary, dried
- 6 medium carrots, cut into chunks
- 3 stalks celery, cut into bite-size chunks
- 1 large onion, chopped
- 1 - 16 oz. can (2 cups) tomatoes, undrained
- 1/4-1/2 cup red wine, completely optional (i've made it both ways, and it's great either way) can substitute beef broth or water.

Step 1Heat oven to 250 degrees.

Step 2In medium covered roaster, combine uncooked beef and all remaining ingredients; stir to combine.

Step 3And that's it! Bake covered at 250 degrees for 5-5 1/2 hours stirring occasionally. Meat will be moist, flavorful and very tender.
