Oat Milk and oat cookies

Oat Milk is so good for you and can be so expensive in the stores. Our Kroger just recently discontinued Hemp milk, Eric's favorite. We figure this is next. I prefer adding some vanilla to mine. Eric likes it plain.

When you make it you leave it out over night after you refrigerate the milk and stir before pouring each time

Ingredients

  • 1 c
    rolled oats (regular or quick cook)
  • 6 c
    cold water
  • 1 Tbsp
    vanilla (optional
  • HEALTHY ALTERNATIVE - MAKES 1 1.2 TIMES AS MUCH AND DOESN'T USE SUGAR OR SALT

  • 1 1/2 c
    rolled oats
  • 9 c
    water
  • 1 Tbsp
    vanilla extract
  • 1/2 tsp
    almond extract
  • 1/4 c
    honey from bee keepers in your area ( for allergy relief)

How to Make Oat Milk and oat cookies

Step-by-Step

  1. Add all ingredients to a large bowl and soak overnight covered with a cloth.

    Use a blender to whip the milk out of the oats.

    Strain the milk through a fine sieve, or cheesecloth, into a bowl.

    Store in a clean glass jar in the fridge.

    Will keep for several days.
  2. Note:

    You can still use the leftover pulp ot make oatmeal or throw it in your bread dough.
  3. To make it sweetened I took 1/4 cup sugar and just enough water to make it sort of liquid and microwaved it for 30 seconds then poured it in the oat milk

    For the vanilla I put in two teaspoons for the recipe made above
  4. From the 1/2 cup leftover pulp I made some amazing cookies

    mix the honey and extracts together and add strained oat milk and stir until dissolved
  6. NOTE FOR LOW PULP
    if you do not want the sediment which I just stir back into the milk you can strain through a coffee filter after your first straining.
