Ginger honey combines two amazing ingredients into a great-tasting and healthy drink… As a matter of fact, I use this in many of my “adult” beverages. I have a list of some of the benefits of this recipe, and there are many, many more. So, you ready… Let’s get into the kitchen.

- 16 ounces fresh, locally made, clover honey
- 1 medium piece of fresh ginger, peeled and thinly sliced, about 2 inches (5cm)

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Peel the ginger, and thinly slice.

Step 4Place the honey and ginger in a tightly-sealed glass container.

Step 5Chef's Note: There are recipes like this that call for "cooking" the honey and ginger, but do not do that. Cooking it will only destroy the good parts of the honey and ginger. Give it 4 weeks, and let it work its magic.

Step 6Place in your cupboard, or on your kitchen window sill for about 4 weeks.

Step 7Chef’s Note: I prefer placing it on my kitchen window sill. Not only does it get the gentle warmth of the sun; in addition, it just looks so nice.

Step 9Some of the ways that you can use ginger honey are: • A nice addition to a cup of hot tea. • A flavor enhancer to ice tea or lemonade. • I use it in my vodka tonics… yum. • Add a tablespoon or two with water and drink twice a day. • Honey and ginger can promote proper digestion. • Honey and ginger have tremendous antibacterial, and anti-parasitic properties. • It also contains phenol compounds and volatile oils, which help with healthy digestion. • It will help the body in the elimination and removal of toxins. • It can assist in bloating and gas. • It can help with symptoms such as cough, sore and scratchy throat, headaches, and also helps clear the sinuses, and stop a runny nose. • It can help to promote the bodies immunity system. • Honey and ginger have been known to reduce inflammation. • Some studies suggest it can help with symptoms associated with migraines. • And many, many more things. My favorite way to use it is adding it to my vodka tonics :-)
