Ingredients
- 1/4 cup coarsley chopped pecans
- 2 tablespoons granulated sugar
- 2 tablespoons water
- 1 tablespoon balsamic vinegar1
- 1 tablespoon honey
- 1/2 teaspoon dijon mustard
- - pinch of salt
- 1/4 cup extra virgin olive oil
- 4 cups baby spinach
- 1 cup sliced strawberries
- 2 - kiwis peeled and sliced
- 1/4 cup soft black pepper cheese (opitonal)
How To Make spinach and strawberry salad with sugar pecans

Step 1Place pecans, sugar, and water in a small saucepan set on medium heat. Stir to dissolve sugar.

Step 2Simmer mixture, stirring occasionally until golden and pecans are coated about 5-7 minutes.

Step 3Transfer to a parchment lined baking sheet cool and set aside.

Step 4In a small bowl whisk the vinegar with the honey, dijon mustard, and salt. Slowly whisk in the olive oil until well combined

Step 5To serve, Divide spinach among salad plates and top with strawberries, kiwis, and sugar pecans.

Step 6Drizzle with vinaigrette and garnish with the crumbled cheese if using.
