  • 2 large
    free-run eggs, beaten
  • 1/2 c
  • 2 c
    mashed or canned pumpkin
  • 3/4 c
    evaporated milk
  • 3/4 c
    brown sugar, such as demerara
  • 3/4 tsp
    ground ginger, or to taste
  • 1/4 tsp
    ground cinnamon, or to taste
  • 1/4 tsp
    ground nutmeg, or to taste
  • 1/8 tsp
    ground himalayan sea salt
  • 1 large
    (9 - inch) pie crust

How to Make Pumpkin Pie


  1. Preheat oven to 450ºF. In a large mixing bowl, add the beaten eggs and the rest of the ingredients. Line a 9” pie plate with pie dough and pour in filling. Place a pie crust shield and transfer to the oven and bake for only 10 minutes. Reduce heat to 350ºF and bake for 40 to 50 minutes or until a cake tester inserted in the center of the pie comes out clean (or clean enough).
  2. Remove from the oven and quickly place a pizza pan over top. Let it sit for 15 to 20 minutes – longer and the pie will get soggy.
