linda's egg custard pie
Linda is my next door neighbor. When we moved into the neighborhood (East Tennessee), her husband would bring fresh eggs from his chickens, and I would return the gift with something I cooked from the eggs. He loves his wife's (Linda) pie. So much so, that he eats one whole pie at one sitting--all by himself. She makes one for us now and always delivers it hot out of the oven. She is a humble lady that say's, "It always puffs up so pretty and then falls after I take it out of the oven." It's sweet and yummy, and, I think a custard pie is supposed to fall.

Ingredients
- 1 cup sugar
- 1 large evaporated milk
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 4 tablespoons butter, softened
- 1 teaspoon vanilla
- 3 eggs *see note
- 1 pie shell, unbaked.
- NOTE: BEAT THE EGG FOR 1 MINUTE BEFORE ADDING TO THE REST OF THE PIE MIX. AFTER ADDING, MIX FOR 30 SECONDS.
How To Make linda's egg custard pie

Step 1Mix all ingredients EXCEPT the eggs.

Step 2Follow the note on the eggs. Pour into pie shell. Bake 350 for 45 minutes or until set.
