I came across this recipe on a coupon, of all places. It caught my eye immediately because I've never heard of any dessert like this. I am making it ASAP. Photo: minuterice.com 09-11-14

Ingredients

  • 1 cup minute white rice or minute brown rice, uncooked
  • 1 box (1 oz.) instant sugar-free butterscotch pudding mix
  • 1 can (16 oz.) solid pack pumpkin
  • 1/2 teaspoon pumpkin pie spice
  • 1 - container (12 oz.) non-dairy sugar-free whipped topping
  • 1/2 cup chopped nuts (optional)
  • - ground cinnamon (optional)

How To Make pumpkin rice pudding

  • Step 1
    Prepare rice according to package directions. Cool.
  • Step 2
    In a large bowl, combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping.
  • Step 3
    Top with nuts and ground cinnamon, if desired.
  • Step 4
    Substitute regular pudding mix and regular whipped topping for the sugar-free versions if desired.
