Ingredients
- 1 cup minute white rice or minute brown rice, uncooked
- 1 box (1 oz.) instant sugar-free butterscotch pudding mix
- 1 can (16 oz.) solid pack pumpkin
- 1/2 teaspoon pumpkin pie spice
- 1 - container (12 oz.) non-dairy sugar-free whipped topping
- 1/2 cup chopped nuts (optional)
- - ground cinnamon (optional)
How To Make pumpkin rice pudding

Step 1Prepare rice according to package directions. Cool.

Step 2In a large bowl, combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping.

Step 3Top with nuts and ground cinnamon, if desired.

Step 4Substitute regular pudding mix and regular whipped topping for the sugar-free versions if desired.
