toasted coconut pie
While on vacation this week I was going through some old bins decluttering and I found another one of my sister Dianne's wonderful pie recipes and went right to work in the kitchen to make it.

Ingredients
- 3 large eggs, beaten
- 1 1/2 cups sugar
- 1/2 cup melted butter
- 4 teaspoons lemon juice
- 1 teaspoon vanilla extract
- 1 1/3 cups coconut
How To Make toasted coconut pie

Step 1Mix together all ingredients and pour into unbaked pie shell. Bake at 425 degrees for 15 minutes. Lower temp. to 350 degrees and bake approx. 40-45 minutes longer.
