While on vacation this week I was going through some old bins decluttering and I found another one of my sister Dianne's wonderful pie recipes and went right to work in the kitchen to make it.

Ingredients For toasted coconut pie

  • 3 lg
    eggs, beaten
  • 1 1/2 c
    sugar
  • 1/2 c
    melted butter
  • 4 tsp
    lemon juice
  • 1 tsp
    vanilla extract
  • 1 1/3 c
    coconut

How To Make toasted coconut pie

  • 1
    Mix together all ingredients and pour into unbaked pie shell. Bake at 425 degrees for 15 minutes. Lower temp. to 350 degrees and bake approx. 40-45 minutes longer.
