Ingredients

  • 1/3 cup bisquick
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 cup quick cooking oats
  • 2 teaspoons stevia
  • 1/2 cup canned pumpkin
  • 3 tablespoons unsweetened vanilla almond milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup raisins

How To Make pumpkin oatmeal and raisin cookies

  • Step 1
    Preheat oven to 350. Line a baking sheet with parchment or spray with nonstick cooking spray.
  • Step 2
    Add the bisquick, oats, stevia, and spices to a medium-sized bowl. Stir to combine. Add the pumpkin, almond milk, and vanilla. Mix well until all ingredients are thoroughly combined. Fold in the raisins.
  • Step 3
    Scoop out 1 tablespoon of the mixture and put on cookie sheet. Flatten with a fork. Bake at 350 for 10-12 minutes.
