Los Alamos National Laboratory is a huge scientific facility in the heart of the mountains north of Santa Fe. This was where the first atomic bomb was designed and built. The cafeteria had excellent food, but the best, and always on hand, was the pumpkin cookies. My friend, Virginia Candelaria cut the original recipe to what you see here. I bet, if you visit LANL today, they will still have these cookies. I was lucky to have worked and met many lifelong friends here.

Ingredients

  • 2 cups brown sugar
  • 2 cups pumpkin
  • 1 cup oil
  • 4 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon ginger
  • 2 cups raisins
  • 1 cup nuts

How To Make pumpkin cookies los alamos national laboratory

  • You can easily freeze these on a tray, package them up frozen and then bake later for a fresh cookie.
    Step 1
    Mix all ingredients together and drop (form) on a cookie sheet or parchment paper. Bake at 350 F for 12 to 15 minutes.
