This is my mom's White Mountain Icing which she usually put on a devil's food cake. From the 1950s.

Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup corn syrup, light
  • 1/2 teaspoon pure vanilla extract
  • 2 large egg whites
  • 2 tablespoons water

How To Make mom's white mountain icing

  • Step 1
    Whisk together the sugar, corn syrup, and water in a small saucepan.
  • Step 2
    Stirring occasionally, bring the mixture to 242 degrees F over medium heat.
  • Step 3
    Meanwhile, beat the egg whites into stiff peaks.
  • Step 4
    Once the hot mixture has reached 242 degrees F, pour it in a very thin, but steady, stream into the egg whites with the mixer running. Beat until the mixture is thick, fluffy and glossy. Beat in the vanilla.
