- Meanwhile, beat the egg whites into stiff peaks.
- Once the hot mixture has reached 242 degrees F, pour it in a very thin, but steady, stream into the egg whites with the mixer running. Beat until the mixture is thick, fluffy and glossy. Beat in the vanilla.
