granny's prune cake

This is old recipe handed down from Granny of course she didn't use food processor but my kids don't like the chunks so we use one. Besides no one seem to recognize that it was a prune cake that way.

Ingredients

  • 1 pound prunes, pitted and chopped
  • 1 cup prune juice
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 large eggs
  • 2 cups flour
  • 1/4 teaspoon clove, ground
  • 3/4 teaspoon allspice, ground
  • 3/4 teaspoon cinnamon, ground
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • BROWN SUGAR ICING
  • 2 cups brown sugar
  • 2/3 cup water
  • 1/3 cup butter, cold
  • 1 teaspoon pure vanilla extract

How To Make granny's prune cake

  • Step 1
    Heat prune juice in microwave and pour over the chopped prunes to soften. Set aside
  • Step 2
    Preheat oven to 350*. Cream together butter and sugar well, then add eggs one at a time beating in between each one.
  • Step 3
    In a large bowl stir flour through baking powder together. set aside.
  • Step 4
    Dissolve soda in buttermilk . Add sifted dry ingredients alternately with buttermilk mix to the creamed butter sugar mixture.
  • Step 5
    *Optional step, but it is the way we like it* Put prune mixture in food processor and coarse chop.
  • Step 6
    Stir prune mixture into the batter and pour into a 9x13 greased pan. bake for 45 minutes to an hour. Test center of cake. Ice with brown sugar icing.
  • Step 7
    Put brown sugar and water in pan and bring to soft ball (238*) on thermometer.
  • Step 8
    Set aside to cool to room temp. After cool add butter and vanilla extract. Beat till creamy. Ice cake.
