flourless cocoa brownies
I didn't have chocolate, just cocoa, but I wanted something brownie-like. I'm sensitive to gluten and greasy substances, so I left them out. These were surprisingly fudgy yet tender!

- 4 large eggs
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 1/4 cups cocoa powder
- 2 teaspoons flavored extract, vanilla or mint

Step 1Beat eggs until fluffy and light yellow

Step 2Add both sugars, then remaining ingredients. The batter will be thick

Step 3Spread in a lightly-greased pan. For thick brownies, use a 9x9, but for about 1/2-3/4" thick brownies, use a 9x13

Step 4Bake at 300*F for 35-45 minutes
