crazy cake
This was my Dad's recipe, and I have no idea where he got it, but I've been making it since I was a kid. It's crazy because you mix the ingredients right in the baking dish! It's super simple and quick, and you can't beat the deep chocolate flavor. Topped with a chocolate butter cream frosting -- you're in chocolate heaven! Did I mention chocolate?! ;)

Ingredients
- 1 cup sugar
- 1 1/2 cups flour*
- 1/2 teaspoon salt
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1 tablespoon vinegar
- 1 teaspoon vanilla
- 1/3 cup vegetable or coconut oil
- 1 cup cold water
How To Make crazy cake

Step 1Sift sugar, flour, salt, cocoa, and soda into a 9" square baking dish.

Step 2Then add vinegar, salad oil, vanilla, and cold water.

Step 3Stir together with a fork until nearly lump free -- make sure to get the corners.

Step 4Bake at 350* for 30-35 minutes, til a toothpick comes out clean. Cool to room temp, and frost.

Step 5NOTES: This makes a nice, deep cake. I have also used round baking pans, divided the batter between them, and made layer cake (plan much shorter baking time) Or you could use a spring form pan, for special occasion decorating :)

Step 6*This recipe is easily made gluten free, by using your favorite gluten-free all purpose baking flour. (I like Bob's Red Mill brand.)
