This dish is so good, it shows what a few ingredients can do. I am craving it like crazy, it is quick and easy to make with excellent results. Really easy to vary.

Pan Fry


  • ·
    1 small sweet onion, coarsely chopped
  • ·
    2 tbsp olive oil
  • ·
    1 clove garlic, minced, optional
  • ·
    12 grape tomatoes, coarsley chopped
  • ·
    1 tsp white sugar
  • ·
    1/2 tsp fresh oregano leaves
  • ·
    1/2 tsp fresh thyme leaves
  • ·
    4 large eggs
  • ·
    1/2 tsp fine sea salt, (or taste)
  • ·
    fresh ground black pepper (to taste)
  • ·
    1 tbsp fresh parsley, finely chopped (garnish)

How to Make Sweet & Savory Scrambled Eggs


  1. Heat the oil in a frying pan and add the onions and saute for 3 - 5 minutes, then add the garlic, stirring to keep from burning.
  2. Next add the chopped tomatoes, sugar, oregano and thyme and cook on medium heat for 3 - 5 minutes or until the mixture thickens a bit.
  3. In a small bowl, whisk the eggs with salt & pepper and slowly add them to the pan.

    Lower the heat and stir constantly until cooked about 3 - 5 minutes.
  4. Garnish with parsley and serve with a nice crusty bread.
