sweet & savory scrambled eggs
This dish is so good, it shows what a few ingredients can do. I am craving it like crazy, it is quick and easy to make with excellent results. Really easy to vary. I hope you will enjoy.

Ingredients
- - 1 small sweet onion, coarsely chopped
- - 2 tbsp olive oil
- - 1 clove garlic, minced, optional
- - 12 grape tomatoes, coarsley chopped
- - 1 tsp white sugar
- - 1/2 tsp fresh oregano leaves
- - 1/2 tsp fresh thyme leaves
- - 4 large eggs
- - 1/2 tsp fine sea salt, (or taste)
- - fresh ground black pepper (to taste)
- - 1 tbsp fresh parsley, finely chopped (garnish)
How To Make sweet & savory scrambled eggs

Step 1Heat the oil in a frying pan and add the onions and saute for 3 - 5 minutes, then add the garlic, stirring to keep from burning.

Step 2Next add the chopped tomatoes, sugar, oregano and thyme and cook on medium heat for 3 - 5 minutes or until the mixture thickens a bit.

Step 3In a small bowl, whisk the eggs with salt & pepper and slowly add them to the pan. Lower the heat and stir constantly until cooked about 3 - 5 minutes.

Step 4Garnish with parsley and serve with a nice crusty bread.
