If you break the egg in the skillet and it sizzles and bubbles the skillet is too hot! This technique was taught to me by my Father when I was around nine years old.

Ingredients

  • 1 large egg
  • 1 teaspoon butter
  • 1 tablespoon bacon grease
  • - salt and pepper to taste

How To Make fried eggs my way

  • Step 1
    Melt butter and bacon grease in a skillet over low to medium low heat
  • Step 2
    Break egg into skillet closer to the edge farther from you. Immediately prick white with fork in a few spots being careful to avoid the yolk. The white should turn white slowly, around ten seconds
  • Step 3
    Tilt skillet toward you so the grease pools up a bit. Take a spoon a baste the grease over the yolk until the white glazes over it. This will take a few minutes.
  • Step 4
    Check to see if the white is done to your liking. It should me bright white with no trace of brown edges, and the Yolk should be runny. No need to flip egg.
  • Step 5
    Salt and pepper to taste. Plate and serve with toast and bacon or sausage.
