my daddy's pancakes with pineapple syrup

We love these pancakes.They are different from regular pancakes.Delicious !

Ingredients

  • 1/2 cup all purpose flour
  • 1/2 cup cornmeal
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup diced ham or other lunch meat
  • 3 tablespoons butter, melted
  • 1 cup diced fresh pineapple
  • 3/4 cup maple syrup
  • 1 tablespoon butter
  • 1/4 teaspoon ground cinnamon

How To Make my daddy's pancakes with pineapple syrup

  • Step 1
    In a large bowl, combine the first six ingredients. Combine eggs, buttermilk, butter and vanilla.Stir into dry ingredients until well blended.Fold in ham.
  • Step 2
    Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown.
  • Step 3
    For syrup, in a small saucepan ,saute pineapple in a butter for 5 minutes or until pineapple is brown.Stir in cinnamon and maple syrup.Serve on top of the pancakes.
