Scrambled eggs are quick, easy, delicious, nutritious and economical. There are so very many ingredients you could add to switch it up for variety. This recipe uses the K.I.S.S. principle (keep it simple, stupid) and I'm including it because the best of cooks learned their skills by starting with the simple stuff!

Ingredients

  • 1 teaspoon butter
  • 2 large eggs (farm fresh is best)
  • - salt to taste

How To Make fluffy scrambled eggs

  • Step 1
    Melt butter in small nonstick skillet over medium-low heat.
  • Step 2
    Add eggs and a generous pinch of salt.
  • Step 3
    Stir and mix to blend the yolks and whites together well.
  • Step 4
    Stir constantly and continue to cook until egg "curds" have set up but are still wet and loose. (For cheese eggs, add 1 or 2 tablespoons grated cheddar cheese and/or 1 slice American cheese, cut up.)
  • Step 5
    Remove from heat and continue to stir until it reaches desired firmness. (Return to heat for a moment if necessary, being careful not to overcook because they will become rubbery.)
  • Step 6
    Plate and serve.
  • Step 7
    Recipe may be doubled, etc...
