mother's pumpkin loaf (sallye)

Another old fashioned recipe from my mother's recipe trove. Since I am the only one in my family who really likes pumpkin, I seldom make it. But it is a wonderfully tasteful recipe. Try it if you like pumpkin, you'll love it.

Ingredients

  • 3-1/3 cup flour (all purpose)
  • 3 cups sugar (granulated or light brown)
  • 1 cup wesson oil ( i use canola)
  • 2/3 cup water
  • 1-1/2 cup pumpkin (not pie filling)
  • 4 large eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon nutmeg
  • 2 teaspoons soda (baking soda)
  • 1-1/2 teaspoon salt
  • 1 cup chopped nuts (optional)

How To Make mother's pumpkin loaf (sallye)

  • Step 1
    NOTE: I HAVE COPIED INGREDIENTS AND DIRECTIONS EXACTLY AS MY MOTHER HAD THEM WRITTEN. I HAVE ADDED MY OWN NOTES IN PARENTHESES ( ).
  • Step 2
    Blend oil, water and sugar ( I used canola oil)
  • Step 3
    Add eggs one at a time (beating mixture after each addition)
  • Step 4
    Add pumpkin and sifted dry ingredients. (sift flour, spices, soda and salt together before adding)
  • Step 5
    Mix well in mixer (on low to medium speed). (add) nuts optional
  • Step 6
    Grease and flour pans. Fill each 3/4 full. Makes 3 loaves 8-1/2" x 4" x 2-1/2" (or will make 2 loaves in 9" x 5" x 3")
  • Step 7
    (Preheat oven to 350º). Bake one hour at 350º, cool in pan.
