Another old fashioned recipe from my mother's recipe trove. Since I am the only one in my family who really likes pumpkin, I seldom make it. But it is a wonderfully tasteful recipe. Try it if you like pumpkin, you'll love it.

Recipe makes 2 to 3 loaves (see instructions)
Ingredients
- 3-1/3 cup flour (all purpose)
- 3 cups sugar (granulated or light brown)
- 1 cup wesson oil ( i use canola)
- 2/3 cup water
- 1-1/2 cup pumpkin (not pie filling)
- 4 large eggs
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 2 teaspoons soda (baking soda)
- 1-1/2 teaspoon salt
- 1 cup chopped nuts (optional)

Step 1NOTE: I HAVE COPIED INGREDIENTS AND DIRECTIONS EXACTLY AS MY MOTHER HAD THEM WRITTEN. I HAVE ADDED MY OWN NOTES IN PARENTHESES ( ).

Step 2Blend oil, water and sugar ( I used canola oil)

Step 3Add eggs one at a time (beating mixture after each addition)

Step 4Add pumpkin and sifted dry ingredients. (sift flour, spices, soda and salt together before adding)

Step 5Mix well in mixer (on low to medium speed). (add) nuts optional

Step 6Grease and flour pans. Fill each 3/4 full. Makes 3 loaves 8-1/2" x 4" x 2-1/2" (or will make 2 loaves in 9" x 5" x 3")

Step 7(Preheat oven to 350º). Bake one hour at 350º, cool in pan.
