The first time I made this healthy bread I thought 'Wow - this must be what bread used to taste like in the old days!' I like it with a pat of organic butter. It's very dense and rich, so it only takes 3-4 bites to be satisfied. I normally do not eat sugar, but the maple syrup is needed to kick the yeast in gear. If you freeze single servings, you can nuke one piece for appx. 60 seconds and it tastes like it just came out of the oven.

Ingredients

  • 1 cup almond flour
  • 1 cup arrowroot flour
  • 1/3 cup coconut flour
  • 1 teaspoon salt
  • 1 1/4 cups warm water (105 - 100 degrees)
  • 2 teaspoons maple syrup
  • 2 teaspoons instand dry yeast
  • 2 tablespoons psyllium husk powder
  • 1 1/2 tablespoons ground chia seeds

  • Step 1
    Stir first 4 dry ingredients together
  • Step 2
    Combine warm water, maple syrup and dry yeast. Stir and let sit for 10 minutes.
  • Step 3
    Stir psyllium and chia seeds into yeast mixture. Wait 3 minutes, then whisk.
  • Step 4
    Combine dry and wet ingredients and stir into a dough. Knead dough (in the bowl) for 1 minute.
  • Step 5
    Put dough in bowl and cover with damp kitchen towel. Let dough rise (at room temp) for one hour.
  • Step 6
    Preheat oven to 425 degrees w/ baking pan w/ parchment paper (or stone) inside oven. Form dough into 1 or 2 round loaves. If desired, Brush with egg-wash (1 yolk + 1tsp water) and cut crisscross pattern with knife.
  • Step 7
    Put dough on HOT parchment paper pan and bake at 425 for 35-40 minutes. Let bread cool down before slicing.
