Ingredients For white chocolate apricot scones

  • 2 c
    flour
  • 1/3 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 c
    cold butter, cut in pieces
  • 1/2 c
    heavy cream
  • 1
    egg, slightly beaten
  • 1 tsp
    vanilla
  • 1 c
    white chocolate chips
  • 1 c
    diced dried apricots
  • 1 c
    chopped nuts

How To Make white chocolate apricot scones

    Preheat oven to 375 degrees.

    Stir together first 4 ingredients. Slice butter into small pieces and cut into dry ingredients.

    Mix egg, cream and vanilla, and add to dry ingredients. Knead in fruit, nuts and chocolate. Knead just until incorporated about 6-8 times. Less time kneading is better.

    Pat into 9 inch circle on greased cookie sheet. Score into 8 wedges.

    I brush a little egg/cream mixture on top and sprinkle with coarse sugar before baking. Bake for 15-20 minutes.
