strawberry-rhubarb almond poppy seed rolls
This came about as a result of an accident. I was following a recipe for a rhubarb roll, but I didn't like the consistency of the dough, so I made a poppy seed dough in the food processor instead. I thought the orange zest would work well with the fruit--it was PERFECT! This was soooooo good! I took it to my hubby's office with some whipped cream to serve while it was still piping hot. It was gone in less than 10 minutes. Sometimes good things do come about quite by accident. I hope you love this as much as we did.

Ingredients
- TO BEGIN:
- 1 1/2 cups strawberries, sliced
- 1 1/2 cups rhubarb, sliced
- 1/4 teaspoon orange zest
- SIMPLE SYRUP:
- 1 cup sugar
- 1 cup water
- CINNAMON/SUGAR TOPPING
- 2 teaspoons cinnamon
- 1/3 cup sugar
- ALMOND POPPY SEED DOUGH IN THIS ORDER:
- 1 cup milk
- 2 tablespoons butter
- 2 teaspoons almond extract
- 2 - eggs
- 2/3 teaspoon salt
- 1/4 cup sugar
- 4 cups flour
- 2 1/2 teaspoons yeast
- 1/4 cup poppy seeds
How To Make strawberry-rhubarb almond poppy seed rolls

Step 1Slice strawberries and rhubarb. Zest in 1/4 tsp. orange zest. Make a simple syrup by combining sugar and water, bring to a boil and boil gently for 10 minutes. Remove from heat.

Step 2Place dough ingredients in the order given in the bread machine or work it by hand. Set on "Manual" mode (you are not baking it in the machine. When the knead cycle stops, remove and roll out on a lightly floured surface into ~14" x ~13" rectangle.

Step 3Spread the strawberry/rhubarb mixture onto the dough. Combine the remaining 1/3 c sugar and cinnamon together and sprinkle over the top of mix.

Step 4Roll up in jelly roll fashion pinching the edges and ends together (Roll will be about 4"x15" long. Cut into 12 pieces.

Step 5In a large baking dish pour the simple syrup in. Place strawberry-rhubarb rolls on top of syrup. Cover lightly with plastic wrap and allow to double in size (about an hour).

Step 6Bake at 350 degrees F for 30 minutes. Serve immediately with vanilla ice cream or whipped cream.
