Named after Mount Logan in the Yukon, this bread is great to take along when you're camping or hiking. You can change up the nuts and fruits in the recipe to suit yourself. Recipe & photo: allrecipes.com 06-07-14

Ingredients

  • 1 1/2 cups whole-wheat flour
  • 1 1/2 cups unbleached all-purpose flour
  • 1 1/4 cups rolled oats
  • 3/4 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 - eggs
  • ½ cup honey
  • ¼ cup molasses
  • 1 cup applesauce
  • ½ cup vegetable oil
  • 1 cup raisins
  • 2/3 cup sunflower seeds

How To Make logan bread

  • Step 1
    In a large bowl, mix together whole-wheat flour, white flour, oats, brown sugar, baking powder, and salt. In a separate bowl, stir together eggs, honey, molasses, applesauce, and vegetable oil. (If you like moister bread, add 1/4 cup more applesauce.)
  • Step 2
    Pour wet ingredients into dry ingredients, and stir until well blended. Mix in raisins and sunflower seeds. Divide batter evenly between two 9-inch square baking pans that have been greased.
  • Step 3
    Bake for 45 minutes in a preheated 350º oven or until top springs back when lightly pressed. Let bread cool in pans for 10 to 15 minutes before cutting into 20 squares per pan. Wrap pieces individually, and refrigerate or freeze.
