judy's 3-2-1-1/2 banana bread

I love my cousin Judy who refers to me dearlingly as "Ruffle Butt" because she babysat me when I wore tights with ruffles on the bottom! This is the perfect banana bread and is so easy to make. No need to use a mixer. The nuts are optional, but I love walnuts. Judy say's anything can go into this--raisins, cranberries etc.

Ingredients

  • 3 - bananas, smashed
  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup buttery crisco
  • 1 - egg
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 pinch salt

How To Make judy's 3-2-1-1/2 banana bread

  • Step 1
    Preheat oven to 400. Smash bananas. Add egg, sugar, crisco, cinnamon, baking soda, salt. Mix well.
  • Step 2
    Add flour 1/2 cup at a time. Batter will be thick.
  • Step 3
    Spoon into greased loaf pan. Place in 400 degree oven for 15 minutes. Do not open the door. After 15 minutes, turn the heat down to 350 and continue baking for 45 minutes.
  • Step 4
    Remove from the oven, turn pan on it's side and with a sharp knife, slide the blade around the pan to loosen. Wrap in foil and do not slice or freeze for 15 minutes. I had to include that photo! Judy on the left, me on the right.
