Trying to eat a bit healthier from time to time. This is a lower fat quick bread. It very moist. It is loaded with Blueberries, and so so delicious. The original recipe I had was given a major makeover to make it tastier and lower fat. Enjoy!

Ingredients

  • 2 1/4 cups all purpose flour
  • 3/4 cup low fat milk
  • 1 cup brown sugar packed
  • 1/4 cup canola or vegetable oil
  • 1/4 cup apple sauce
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup plus 1/8 cup chopped walnuts or pecans
  • 2 cups frozen or fresh blueberries
  • 1 teaspoon water
  • 1 tablespoon sugar

How To Make healthier blueberry oat bread by noreen

  • Step 1
    Heat oven to 350 degree's. Spray oil a loaf pan.
  • Step 2
    Mix brown sugar, oil, eggs, vanilla, and milk in a large bowl.
  • Step 3
    Mix in the flour, oatmeal, cinnamon baking powder, salt and 1/2 cup nuts. Mix well. Fold in the blueberries until mixed evenly. Spread in loaf pan.
  • Step 4
    Mix remaining 1/8 cup nuts with a TB sugar, and 1 tsp of water. Sprinkle over top of bread batter. Lightly pat down.
  • Step 5
    Place in oven. Bake at 350 degree's 50-60 minutes or until golden brown. Test with pick to come out clean. Cool 15 minutes. Remove from pan and cool completely.
