We try to eat "clean" at least 80% of the time and we eat very little refined sugars. For those with a sweet tooth, this recipe is probably not going to be sweet enough, but my family & my son's friends love them. I am an Independent Plexus Ambassador so the only protein powder we use is Plexus 96 protein powder. It is sweetened with Stevia which is my family's sweetener of choice. We do not use ANY artificial sweeteners. Only Stevia, PURE honey or coconut sugar and for special occasions, organic Sugar in the Raw.

Ingredients

  • 1 cup organic unbleached all purpose flour
  • 1 cup oats (i use organic)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 package plexus 96 vanilla protein powder (28 grams)
  • 1 large egg, beaten
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup milk or almond milk
  • 2 cups chopped apples
  • 1 cup chopped pecans or walnuts (optional)
  • 1/4 cup plain greek yogurt

How To Make apple protein muffins - sugar free

  • Step 1
    Preheat oven to 350 degrees. Grease muffin cups or use paper liners.
  • Step 2
    In a large bowl combine flour, oats, baking powder, salt, cinnamon, nutmeg and protein powder. Make a well in center of flour mixture and set aside.
  • Step 3
    In a medium bowl combine remaining ingredients. Add egg mixture to flour mixture. Stir just until all is moistened (batter should be lumpy). Spoon into muffin cups.
  • Step 4
    Bake at 350 degrees about 20-25 minutes. Makes 12 muffins.
