You won't believe you wonderful and refreshing this dip tastes. Once I start eating it I keep going back for more. Of course home grown cucumbers are always better but store bought cucumbers will work just fine when you get a craving.

Ingredients

  • 1 - english or 2 medium cucumbers
  • 1 - 8 oz pkg cream cheese, softened
  • 1 1/2 tablespoons grated onion
  • 1 teaspoon dried dill weed (or more to taste)
  • 1/4 teaspoon cayenne pepper (or more to taste)
  • 2 teaspoons lemon juice
  • - salt to taste
  • 1 - drop green food color (optional)

How To Make cucumber dip

  • Step 1
    Peel cucumbers and removed seeds with a spoon. Grate cucumbers.
  • Step 2
    Drain all water from cucumbers, squeeze it in a paper towel to make sure most of the moisture is gone but don't make it bone dry.
  • Step 3
    Put all of the ingredients into a blender and mix well.
  • Step 4
    Serve cold with pita chips, white corn chips, thin cucumber slices, celery sticks, carrot sticks, grape tomatoes, etc.
