crab on crackers hors d'oeuvres with a twist
This hors d'Oeuvre is relatively easy to produce, and makes a great way to keep your guests happy while waiting for the main event. And with only six ingredients, it's a snap to put together. Actually, I’m make a bunch of these up for one of my clients, and I’ll probably save a few for my July 4th party coming up this week.

Ingredients
- 8 ounces fresh crabmeat, picked over for shells
- 3 tablespoons mayo
- 1 teaspoon lemon juice, freshly squeezed
- 1 pinch cayenne pepper
- 4 slices bacon, thick sliced
- 15-20 slices colby cheese, cut into 1-inch squares about 1/8 inch thick
How To Make crab on crackers hors d'oeuvres with a twist

Step 1Gather all your ingredients

Step 2Sauté the bacon until crisp, but not too crisp

Step 3Remove from pan and allow to drain and cool on some paper towels

Step 4Chef's Note: Reserve the bacon grease for another use (I’m planning on sautéing a couple of chicken breasts with it… but that’s another recipe).

Step 5Chop the bacon into small pieces and reserve.

Step 6Add the mayo, lemon juice, salt & pepper (to taste), and the cayenne pepper to a bowl, and mix thoroughly.

Step 7Carefully fold in the crab until fully incorporated.

Step 8Place a heaping teaspoon of the crab mixture on a cracker, and add a few pieces of chopped bacon.

Step 9Cover with a piece of the cheese, and place in a broiler and broil until the cheese bubbles and begins to brown.

Step 10Serve with a lemon or lime wedge. Enjoy.
