Ingredients
- 2 pounds anchovies
- 2 - onions, thinly sliced
- 2 cloves garlic, diced
- 1 tablespoon parsley, chopped
- 1 tablespoon lemon juice
- 1 tablespoon dried oregano
- 3 - tomatoes, thinly sliced
- - olive oil, enough to cover bottom of pan
- - salt and pepper
How To Make baked anchovies with tomatoes

Step 1Wash and clean the anchovies by removing the heads and innards. Strain very well in strainer.

Step 2Preheat oven at 400* F. In a ovenproof pan place the sliced onions, on top place the anchovies with the diced garlic. Place the tomato slices on top and add the lemon juice, oregano, parsley and pour olive oil over the fish, enough to cover the bottom of the pan.

Step 3Bake for 15 -20 minutes. Serve hot and Enjoy! Kali Orexi
