Popular Greek summer "meze" appetizer, especially on all the islands and coastal villages. Always accompanied by a glass of Ouzo, white wine or even beer. Hope you give this appetizer a try and like it like we do.
1Wash and clean the anchovies by removing the heads and innards. Strain very well in strainer.
2Preheat oven at 400* F.
In a ovenproof pan place the sliced onions, on top place the anchovies with the diced garlic. Place the tomato slices on top and add the lemon juice, oregano, parsley and pour olive oil over the fish, enough to cover the bottom of the pan.
