This is a Bone in Center Pork Roast, that roast just as well weather it has the bone in or is boneless. Those pan dripping on the pan makes robust and flavorful gravy. This is a no fail best ever pork Roast you will ever make. Try it and see for your self

Sliced Oven Roasted rolled Pork, you will love it with or without the gravy, because it is so moist, tender, succulent, & juicy. Sliced with my electric knife.
Oven Roasted Rolled Pork, the juices that you see in the bottom of the pan is what I made the gravy from, if you like you can even add some sliced mushrooms. It is good either way.
Oven Roasted rolled Pork with Green Bean Casserole with Parmesan and Mashed Potatoes served with a gravy made from the drippings. WHAT'S NOT TO LOVE ABOUT THIS TASTY MEAL.

This is now in my file of what to do with a pork loin, coconut flour? I never thought of that, didn't know there was such a thing.
Thanks Jane and I am happy to hear that you liked the pork. You may want to add a little fiber to your gravy by using coconut flour. I used it in this recipe Smothered Cube Steak in Coconut Flour Gravy just a thought. Weighed out the portion of meat as well as the size of the potato. Think GW might break that scale on purpose one day soon :D
