You may add the brittle to a generously buttered sheet pan or cookie sheet as I have done in this photo, or if some of your pans are old and tattered, line the pan with foil and generously butter the foil, before adding the brittle. The butter helps to release the brittle. With or without foil on the pan they both work if you generously apply softened butter first.
