Tested the cake with a tester and it came out clean...in several places. Cake pulled away from the sides of the pan...another indication that it is done. STILL it fell some in the middle after it cooled a bit. 12/20/12

This is the best Carrot Cake I have made..I agree the title serves says it best, because it is so good. As you can see...someone's fingers could not keep out of it before I took this picture, and it was just frosted...he, he!
This cake is absolutely delicious! I added the required grated carrots, and walnuts...but also added (optional) 1 cup of coconut flakes, and 2 cups of raisins. I made it really chunky..love it this way!

This is my carrot cake I baked yesterday following this recipe step by step. It came out soft and tasting very nice. The sweet aroma of cinnamon and carrots makes you keep wanting more. I did not ice it but still it tastes very good. I did not have walnuts instead put a few raisins and it remains the best carrot cake I have ever baked and tasted.

I'm really picky with my carrot cake and I had to admit that this recipe is DEEEEELISHHHHHOUS! The cake is moist with the right blend of ingredients and the icing is yuuuummmmmyyyy!!!
