As You Can See...someone's Fingers Could Not Keep Out Of It Before I Took This Picture, And It Was Just Frosted...he, He! This Cake Is Absolutely Delicious! I Added The Required Grated Carrots, And Walnuts...but Also Added (optional) 1 Cup Of Coconut Flakes, And 2 Cups Of Raisins. I Made It Really Chunky..love It This Way! Thank You Jane For Sharing This Delicious Recipe..this Is A Keeper For Me, And The Name Says It All!

I Did Not Ice It But Still It Tastes Very Good. I Did Not Have Walnuts Instead Put A Few Raisins And It Remains The Best Carrot Cake I Have Ever Baked And Tasted.

It’s delicious! One of the best recipes I’ve tried! I’ve been looking for a long time and I think this is it! It’s very moist and calls for a second piece by everyone! Excellent recipe!
