Donna, love your photo and I am so happy you posted it! Sorry it took me almost a whole year to notice it! Duh! I like that you and Jan both took the time to post your finished products. It is such a fun recipe to make your own too. That's why I love it so much!

The steel-cut oats are pretty fine-textured, kinda like rice. We get them at Costco...they cook in five minutes, so they're not sloooww-cooking. But I think the fact that they weren't big pieces made a finer-textured bar that stuck together well. AND we learned from others' problems and really mashed them into the pan with the back of a metal soup spoon.

Ok next time I make these I'll change the oats, that's got to be where I messed mine up. I think all I had was the quick cooking oats. The taste was great though. hehehe that was really sweet of Doug. I'm thinking the syrup gave yours a little bit of the funny taste too. But I bet they are still good. I do like the taste of the butterscotch chips in it too.

I do love that there's so many different things you can try with this recipe. A more low cal recipe of it would be nice though as they are soooooo addictive, that's for sure. We both can use a more low cal way of eating ourselves. Since this picture we both have put on another 20 pounds and that pic is from only 2 years ago. 10 pounds a year is not good. hehehe

You may be sorry you asked! lol! (BTW, Your version sounds really good!) Here's a copy of what I posted on the recipe thread--it's long:


We just took ours out of the oven and they smell incredible! We used Coach's Steel-Cut Oats because that's all we had, and it gives them a "finer" texture than the rolled oats. We'll see how that works for holding them together.

We also made some changes in an effort to cut back on sugar and fat and that may cost us in flavor: We used 1/4-cup br. sugar & 1/4-cup Splenda plus 1/2-cup sugar-free Mrs. Butterworth's maple syrup for sweeteners; 1/4-cup unsweetened apple sauce (instead of the yummy butter). We left out the yummy coconut and, for our two cups of goodies, we mixed dried cranberries, pumpkin seeds, sunflower seeds, a few cashews, walnuts, and chocolate chips.

OKAY! Doug just brought me the first one out of the pan. Sounds like he's really sweet, huh? He stood here and waited to see if I gagged before he tried one! LOL! So, I'm a LITTLE disappointed because there's a little bit of a bitter aftertaste. But it grew on me. It's a very satisfying, filling bar. I think when we make them again we will use less of the sugar-free syrup. I've baked with Splenda many times without getting any bitter taste, so it must be the syrup. When I got into the middle of the bar, there were choc. chips, and it just tasted sweet. Also, I think next time I'll put in a LITTLE coconut and use raisins instead of cranberries because they're not very sweet (the cranberries).

The bars held together really well with the steel-cut oats. I can hold one in my hand to eat it.
If I make these for the grandkids, though, I’ll skip all the calorie-cutting steps and just go for YUMMY! LOL!

Overall, A SUCCESS: tasty, satisfying, filling, and healthy.

haven't read all the posts. Didn't know what everyone was doing different. What did you do different Jan? I did half butter and then mashed a banana in mine. I also used white chocolate flavoring. And instead of chocolate chips I put butterscotch chips as that's what I had. also had a can of planters salty mixed nuts so I used that. I think that's about it.

Hey Jan, they had the house smelling soooooo good. and though I couldn't get them to hold together really well the taste was just amazing. I did make a couple of changes but they are so delish.
