Great Spring Recipes to Freshen Up Tonight’s Dinner

Marinated Grilled Pork Tenderloin

This time of the year makes me so happy… the weather is warmer, days are longer and, to me, the air smells a bit cleaner. I like to freshen up my menu too. This week, I decided to share easy springtime recipes that you can make for tonight’s dinner.

Start with Tammi Preston’s (Pilot Rock, OR) Spring Salad with Orange Dressing. The textures in this salad are amazing – from the crunch of the nuts to the dried apricots and Craisins. The dressing is what really sets this recipe apart. I loved the rice vinegar and the orange juice combo.

As Tammi notes, “this delightful salad is excellent for large gatherings” so if you’re not cooking for a crowd, I’d suggest cutting the recipe in half. The variety of the greens and fruits will be a fresh addition to your table.

Grilling weather is here and Gina Roberts’ (Kidder, MO) Marinated Grilled Pork Tenderloin will be tasty on your table.

“I wow people all the time with this pork loin,” explains Gina. “People come back, not for seconds, but for thirds and fourths.”

Gina’s marinade is what makes this pork loin special – it’s packed with flavor. The acidity from lime and orange juice, a bit of heat from the jalapeno and freshness from the cilantro make the pork taste heavenly. With the added flavors from grilling, this simple pork loin is delightful.

Asparagus is plentiful in springtime, so why not make Ashley D.’s Parmesan Asparagus to serve alongside the pork.

I typically roast or grill my asparagus, but I’m always looking for a new way to prepare it. Ashley sauteed asparagus in a garlic butter sauce that takes the flavor to another level. Then, freshly shaved Parmesan is sprinkled on top. Oh my… this is yummy.

If pork isn’t a family favorite, Paula Collier’s (Taylorville, IL) Asparagus Chicken Wraps are fresh, fabulous and a delicious dinner option.

Paula says they’re “super easy and yummy” and she’s right. The sesame ginger marinade really gave this chicken great flavor.

I made sure to add the marinade to the chicken while cooking like Paula suggested and basting it just added to the great flavor. The bacon had a nice smoked flavor and the asparagus is tender yet still had a nice crunch. Delish!

Finish the meal with Amber Moon’s Easy Crescent Dough Lemon Bars. “Super simple and a hit,” shares Amber. “My mom now requires me to make these for her birthday while the kids ask for them all the time.”

This is a delicious lemony treat your family will love. Made with five ingredients you probably have in the pantry, you can whip these up in no time. The filling is creamy and packed with lemon flavor. Dusting powdered sugar on top and then baking, creates a magnificent crunchy topping.
