Recipes for All You Lemon Lovers

Lemon Poppy Seed Waffles With Blueberry Sauce

In warmer weather, my taste buds gravitate towards lemon. Sweet and savory, I look for ways to incorporate their wonderful tart flavor into my meals. If you love lemon anything as I do, you’re going to want to try these Blue Ribbon recipes.

Homemade waffles are an easy breakfast. Jamallah Bergman’s (Atlanta, GA) Lemon Poppy Seed Waffles With Blueberry Sauce is amazing.

“Light and yummy waffles that go good with the blueberry sauce or just good old maple syrup,” thinks Jamallah.

Slightly lemony, the waffles are perfectly crisp on the outside and light and airy on the inside.

The blueberry sauce is thick, sweet, and full of berries. It’s almost like a blueberry pie filling that is spooned on top of the waffles. So good!

“I love to eat salads made with whole grains,” explains Lucy Selvaggio-Diaz. For this Bulgur Salad With Lemon-Cumin Dressing, you will need fine-grain bulgur. Quinoa would also work great in this salad.”

If you’re not familiar with bulgur, it’s a Middle Eastern grain with a nutty flavor and, like other whole grains, a chewy texture. Typically, it’s found in tabbouleh salad. But, Lucy has it as the star of her salad recipe.

This flavor-packed salad makes a fantastic summertime lunch or light dinner. It’s a refreshing salad filled with crisp, cool cucumber, sweet yellow tomatoes, and zesty red onion.

Lucy’s lemon-cumin dressing really elevates the salad and makes all the flavors come alive. Don’t be surprised if you find yourself going back for thirds.

Planning to grill burgers or steaks tonight? Plan to serve Meryl Hausner’s (Wood-Ridge, NJ) Lemon Vegetable Pasta Salad as a side dish. It makes a lot, so you’ll have leftovers for a few days.

“This salad goes a long way, great for large gatherings,” shares Meryl. “This pasta salad is easy and takes no time to throw together.”

I love this pasta salad. It’s very different from other recipes I’ve tried. The fresh asparagus, snap peas, and bell peppers add tons of crunch.

Meryl jazzes up mayonnaise by adding yogurt, fresh lemon juice, and tarragon. The result is a lemony mayo that has a light, fresh taste that coats the pasta.

Linda Kauppinen (Greenwood, FL) first made her Hot Lemon-Herb Chicken Wings for students at Cornell University. “I mixed the hot sauce with the lemon herb recipe that I had and it was an amazingly huge hit with the frat boys who asked for this dish numerous times,” says Linda.

If you’re looking to update your hot wings, give these a try. I really loved the flavor of the fresh lemon juice combined with the traditional hot sauce. These are really good wings.

The ultimate lemon dessert is Lemon Meringue Pie. Penny Burdge (Shawnee, KS) shared her recipe and it’s delicious.

“Originally from my grandmother via my mom,” reveals Penny. “I’ve adjusted it through the years to make it tarter because that’s how my family likes it.”

Inside a buttery pre-made crust is a custardy filling that’s filled with lots of fresh lemon flavor. On top is a creamy meringue that has a hint of lemon. Light and sweet, Nothing beats a great classic recipe and this will quickly become a family favorite.

Morning, noon, or night, there are many ways to enjoy the tart flavor of lemon. If you want more lemon recipes, check out this collection. I guarantee you’ll find a few you love. Happy Pinching!
