Strawberry Banana Bread- Egg Free

This is a great recipe for using fresh strawberries. My batter looks darker in the pictures because I prefer to use coconut palm sugar instead of refined white sugar. You can use either. Sifting the ingredients makes this bread light and fluffy! You could use any berry you want but the blend of banana and strawberry is wonderful!

Ingredients

1 1/2 c
all purpose flour
3/4 c
coconut palm sugar or refined sugar
1/2 tsp
salt
1/2 tsp
cinnamon
1 tsp
baking soda

ripe bananas, mashed
2 tsp
vanilla extract
1
container non-fat strawberry or vanilla yogurt
4 Tbsp
butter, melted (cooled)
3 Tbsp
fat free milk (any kind will work fine)
1 c
strawberries, diced

Directions Step-By-Step

Prepare a 9 x 5 inch bread pan with cooking spray. I always line the bottom with parchment for easy removal. Spray parchment as well. Preheat oven to 350 degrees.

Sift flour sugar salt and baking soda into large bowl.

In medium bowl, combine mashed bananas, vanilla, yogurt and 3 T fat free milk

Slowly combine the wet ingredients into the dry ingredients. Batter will be thick. Once they are combined gently stir in strawberries.

Pour into the prepared bread pan. Bake for 60-65 minutes. Bread is done when toothpick is inserted into the middle and comes out clean. Top should be golden brown.

Cool in pan for 10 minutes then turn out onto a cooking board to cool completely. Serve with butter!
