Ingredients
- 4 medium yellow beets,washed and peeled,sliced
- 3 tablespoons vegetable or canola oil
- 1 medium onion, diced
- 1 tablespoon minced garlic
- 4 - ripe pears,peeled and diced
- 1 cup vegetable or chicken bouillon
- 1/2 cup white grape juice or dry white wine
- 2 tablespoons honey
- 1 cup hazelnut coffee creamer
- s and p - to taste
- 1/2 cup walnut pieces for garnish
- - orange peel for garnish
How To Make yellow beet and pear soup

Step 1Heat the oil in a medium kettle and add the onion; sauté until tender. Wash and peel beets and slice into the kettle. Add the bouillon and garlic. Cook until beets are tender. Add the pears and cook until both beets and pears are soft.

Step 2Remove kettle from heat. Pour or scoop mixture into blender or food processor and puree until smooth. Add the white grape juice or wine, honey and creamer; blend until smooth.

Step 3Pour into individual soup bowls and garnish with orange peel and/or walnuts. Enjoy!
