Yellow Beet and Pear Soup

Great for club- and if you an abundance of these beets great for a pot luck or church gathering.
Ingredients

4 mediumyellow beets,washed and peeled,sliced

3 Tbspvegetable or canola oil
-
1 mediumonion, diced
-
1 Tbspminced garlic
-
4ripe pears,peeled and diced
-
1 cvegetable or chicken bouillon
-
1/2 cwhite grape juice or dry white wine
-
2 Tbsphoney
-
1 chazelnut coffee creamer
-
s and pto taste
-
1/2 cwalnut pieces for garnish
-
·orange peel for garnish
How to Make Yellow Beet and Pear Soup
- Heat the oil in a medium kettle and add the onion; sauté until tender. Wash and peel beets and slice into the kettle. Add the bouillon and garlic.
Cook until beets are tender. Add the pears and cook until both beets and pears are soft. - Remove kettle from heat. Pour or scoop mixture into blender or food processor and puree until smooth.
Add the white grape juice or wine, honey and creamer; blend until smooth. - Pour into individual soup bowls and garnish with orange peel and/or walnuts. Enjoy!
