This makes a one-pot meal that is economical, and tasty. It is also great for potlucks. Add more beef broth if you want to serve as a soup. The kitchen will fill up with a great cooking smells! Some nice rye, or pumpernickel bread on the side is all you need for a complete meal.

Ingredients

  • 2 packages smoked turkey sausage, sliced into medium coins
  • 1 pound baby carrots
  • 1 small head of cabbage, cut to large diced chunkss
  • 5-6 medium yukon gold potatoes
  • 1 large onion, large dice
  • 2 tablespoons frozen apple juice concentrate
  • 1 cup beef broth
  • 1 tablespoon hot german mustard
  • 1 tablespoon cider or red wine vinegar
  • 2 teaspoons caraway seed (optional)

How To Make slow cooker smoked sausage, carrots and cabbage

  • Step 1
    Layer the cabbage,potatoes, onion, carrots and sausage in the 5 to 6-quart slow cooker.
  • Step 2
    Whisk together the juice concentrate, mustard, vinegar and caraway seeds. Sprinkle with freshly ground pepper to taste, if desired.
  • Step 3
    Pour the beef broth over all.
  • Step 4
    Slow cook on low for 8-10 hours.
