The healthiest soup you can make :-) You can add some curry powder or Italian chillie oil for a bit more flavour.

Ingredients

  • 2 cups fresh spinach leaves (2 big hands), chopped
  • 1 cup courgette (zucchini), chopped
  • 1 cup kale, chopped
  • 1/4 cup olive oil, extra virgin or avocado oil
  • 1 pinch himalaya salt
  • 1/2 cup pine nuts (or cashew nuts)
  • 2 cups coconut milk
  • 1 cup water

How To Make pop-eye and olive oil soup

  • Step 1
    Put everything except the nuts in a big pan. Bring to boil and simmer for 5-10 minutes.
  • Step 2
    Put in blender. Serve in bowls, sprinkle nuts. Enjoy!
