Ingredients
- 2 cups fresh spinach leaves (2 big hands), chopped
- 1 cup courgette (zucchini), chopped
- 1 cup kale, chopped
- 1/4 cup olive oil, extra virgin or avocado oil
- 1 pinch himalaya salt
- 1/2 cup pine nuts (or cashew nuts)
- 2 cups coconut milk
- 1 cup water
How To Make pop-eye and olive oil soup

Step 1Put everything except the nuts in a big pan. Bring to boil and simmer for 5-10 minutes.

Step 2Put in blender. Serve in bowls, sprinkle nuts. Enjoy!
