1 smallonion thinly sliced
1 smallzucchini cut in 1/4 inch rounds
12pods okra cut in 1/2 inch rounds
1red tomato diced
1fresh stem organe
·salt and ground black pepper
How to Make OKRA RATATOUILLE
- In a large skillet with deep sides, heat the olive oil over medium heat.
- Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes
- Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
