    onion thinly sliced

    zucchini cut in 1/4 inch rounds
  • 12
    pods okra cut in 1/2 inch rounds
  • 1
    red tomato diced
  • 1
    fresh stem organe
  • 2
    steams thyme
  • ·
    salt and ground black pepper

How to Make OKRA RATATOUILLE

Step-by-Step

  1. In a large skillet with deep sides, heat the olive oil over medium heat.
  2. Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes
  3. Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
