Ingredients

  • 2 tablespoons olive oil
  • 1 - clove garlic
  • 1 small onion thinly sliced
  • 1 small zucchini cut in 1/4 inch rounds
  • 12 - pods okra cut in 1/2 inch rounds
  • 1 - red tomato diced
  • 1 - fresh stem organe
  • 2 - steams thyme
  • - salt and ground black pepper

How To Make okra ratatouille

  • Step 1
    In a large skillet with deep sides, heat the olive oil over medium heat.
  • Step 2
    Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes
  • Step 3
    Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
