Ingredients
- 2 tablespoons olive oil
- 1 - clove garlic
- 1 small onion thinly sliced
- 1 small zucchini cut in 1/4 inch rounds
- 12 - pods okra cut in 1/2 inch rounds
- 1 - red tomato diced
- 1 - fresh stem organe
- 2 - steams thyme
- - salt and ground black pepper
How To Make okra ratatouille

Step 1In a large skillet with deep sides, heat the olive oil over medium heat.

Step 2Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes

Step 3Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
