I love celery and use it in many things, but sometimes my s=celery begins to look a little soft. This is a perfect way to use that not quite crisp celery for an inexpensive tasty soup. It is made with skim milk to keep the fat content down but you could add whole milk or half and half if you want a creamier soup.

celery hearts and leaves chopped
chicken broth or vegatable broth if your vegitarian
salt and pepper to taste
How To Make
melt butter in pan
Add celery and onion and cook until soft but not browned
add flour and continue cooking stirring constantly
add broth and bring to boil. Continue stirring until thickened. then allow to simmer for 10-15 minutes, stirring frequently.
Add nutmeg and milk.
Bring just to a simmer and then turn off heat. Add salt and pepper to taste.
Serve with a Slice of crusty bread or grilled cheese.
