Miso soup has got to be one of the easiest soups to make. It has very few ingredients and is very healthy. I make mine year round because it's good warm as well as at room temperature.

Ingredients
- 4 cups vegetable broth (low sodium)
- 4 cups filtered water
- 4 large scallions, chopped
- 2/3 cup mellow white miso (miso master organic)
- 2 - sheets nori, cut in fine strips
- 1 - block firm tofu cut in cubes
- 1 tablespoon tamari sauce
- 1 teaspoon sesame oil
- 4 - white button mushrooms, sliced
How To Make home made miso soup

Step 1Add the vegetable broth and water to a large soup pot. Stir to combine.

Step 2Add the green parts of the scallions and the chopped mushrooms.

Step 3Bring to a boil and simmer for 5 minutes.

Step 4Add the miso and stir to dissolve it. Add the rest of the ingredients and give a good stir. DO NOT BOIL! It will change the flavour and destroy the healthy properties of the soup. If you must heat it do it on low.
