A hearty and healthy soup that is perfect for the winter season. You can add additional vegetables such as broccoli, lemongrass, bokchoy, and green beans if you like. This is a healthy dinner option since it uses a lean cut of chicken. It is packed with protein. If you want to make this recipe vegan-friendly, you can substitute the chicken breast for tofu. Ingredients For hearty mushroom & vegetable soup

4 cvegetable stock

1thumb-sized ginger

1fresh chili
-
1/4 cenoki mushroom
-
1/4 cchicken breast
-
1/3 crice noodles
-
1 Tbspsoy sauce
-
1/4 csnow peas
-
1/4 cshitake mushroom
-
1 Tbspvegetable oil
-
2 tspfish sauce
-
handful of coriander
-
salt and pepper to taste
How To Make hearty mushroom & vegetable soup

1Thinly slice the ginger

2Roughly chopped the shitake mushroom.

3Cut each chicken breast in half.

4Heat oil and saute the ginger for 2 minutes or until it releases its aroma

5Add the shitake mushrooms and saute for another 3 minutes.

6Add the vegetable stock, fish sauce and soy sauce and bring it to a boil.

7Carefully add the chicken breast and simmer for 20 minutes.

8Add the rice noodles and cook for another 2 minutes until cooked.

9Season with salt and pepper and taste.

10Add the snow peas and enoki mushrooms at the end.

11Top with fresh cilantro and sliced chili
