This is a healthy dinner option since it uses a lean cut of chicken. It is packed with protein. If you want to make this recipe vegan-friendly, you can substitute the chicken breast for tofu. Ingredients

  • 4 cups vegetable stock
  • 1 thumb-sized ginger
  • 1 fresh chili
  • 1/4 cup enoki mushroom
  • 1/4 cup chicken breast
  • 1/3 cup rice noodles
  • 1 tablespoon soy sauce
  • 1/4 cup snow peas
  • 1/4 cup shitake mushroom
  • 1 tablespoon vegetable oil
  • 2 teaspoons fish sauce
  • handful of coriander
  • salt and pepper to taste

How To Make hearty mushroom & vegetable soup

  • Step 1
    Thinly slice the ginger
  • Step 2
    Roughly chopped the shitake mushroom.
  • Step 3
    Cut each chicken breast in half.
  • Step 4
    Heat oil and saute the ginger for 2 minutes or until it releases its aroma
  • Step 5
    Add the shitake mushrooms and saute for another 3 minutes.
  • Step 6
    Add the vegetable stock, fish sauce and soy sauce and bring it to a boil.
  • Step 7
    Carefully add the chicken breast and simmer for 20 minutes.
  • Step 8
    Add the rice noodles and cook for another 2 minutes until cooked.
  • Step 9
    Season with salt and pepper and taste.
  • Step 10
    Add the snow peas and enoki mushrooms at the end.
  • Step 11
    Top with fresh cilantro and sliced chili
