A bowl full of garden veggies brimming with healthy nutrients. This is a no-cook recipe which is a perfect way to keep cool on a hot summer's day. Substitutions: replace vegetable broth with chicken broth, or use sour cream instead of salsa,

Ingredients

  • 1/4 cup carrot, shredded
  • 1/2 cup cucumber, peeled, chopped
  • 2 medium avocados, peeled, chopped
  • 1/4 cup onion, chopped
  • 1 - 2 cloves garlic, minced
  • 2 cans vegetable broth, divided
  • 2 - 3 dashes bottled hot pepper sauce
  • 1 1/2 teaspoons paprika
  • 4 tablespoons salsa, tomato-based
  • 2 sprigs chives, chopped

How To Make garden lover's soup

  • Step 1
    In a food processor, combine carrots, cucumber, avocado, onion, garlic & 1 can of vegetable broth. Blend till smooth.
  • Step 2
    Add remaining can of vegetable broth & hot pepper sauce. Blend till smooth.
  • Step 3
    Pour into a large bowl & cover with plastic wrap.
  • Step 4
    Chill soup in fridge for at least 1 hour. At same time, chill 4 soup bowls.
  • Step 5
    To serve, ladle chilled soup into chilled soup bowls.
  • Step 6
    Carefully spoon 1 Tbsp of salsa into top centre of each bowl of soup
  • Step 7
    Sprinkle chopped chives onto soup to decorate.
