Ingredients
- 1/4 cup carrot, shredded
- 1/2 cup cucumber, peeled, chopped
- 2 medium avocados, peeled, chopped
- 1/4 cup onion, chopped
- 1 - 2 cloves garlic, minced
- 2 cans vegetable broth, divided
- 2 - 3 dashes bottled hot pepper sauce
- 1 1/2 teaspoons paprika
- 4 tablespoons salsa, tomato-based
- 2 sprigs chives, chopped
How To Make garden lover's soup

Step 1In a food processor, combine carrots, cucumber, avocado, onion, garlic & 1 can of vegetable broth. Blend till smooth.

Step 2Add remaining can of vegetable broth & hot pepper sauce. Blend till smooth.

Step 3Pour into a large bowl & cover with plastic wrap.

Step 4Chill soup in fridge for at least 1 hour. At same time, chill 4 soup bowls.

Step 5To serve, ladle chilled soup into chilled soup bowls.

Step 6Carefully spoon 1 Tbsp of salsa into top centre of each bowl of soup

Step 7Sprinkle chopped chives onto soup to decorate.
