Ingredients

  • 2 cups vegetable both
  • 3 cups frozn hash browns thawed
  • 1 cup each chopped onion and peppers, carmelized in skillet with 1 tbs olive oil
  • 1 package 16 oz. broccoli, cauliflower and carrot blend, thawed
  • 1 cup fat free evaporated milk
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon each sea salt and black pepper

How To Make easy creamy vegetable soup

  • Step 1
    In a large saucepan, bring broth to a boil.
  • Step 2
    add in hash browns and vegetables. bring back to a full boil.
  • Step 3
    reduce heat to medium. Cover and cook 10 minutes until vegetables are tender. add in evaporated milk and seasonings. heat thru. makes 4 (1 1/2) cup servings.
