Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 medium carrot, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 oz.ea.) diced tomatoes, undrained
- 1 teaspoon dried basil, crumbled
- 3 cups reduced sodium chicken broth
- - salt and black pepper to taste
- 8 - fresh basil leaves, julienned
How To Make chunky tomato basil soup

Step 1In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.

Step 2Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.

Step 3Reduce heat to low and simmer for 15 minutes or until vegetables are soft.

Step 4Ladle into bowls and garnish with fresh julienned basil. Serve hot.
