Found this simple recipe on the back of a can of tomatoes. I LOVE tomato basil soup, always order it in restaurants if they have it. Photo: glowkitchen.com 06-02-15

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 medium carrot, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz.ea.) diced tomatoes, undrained
  • 1 teaspoon dried basil, crumbled
  • 3 cups reduced sodium chicken broth
  • - salt and black pepper to taste
  • 8 - fresh basil leaves, julienned

How To Make chunky tomato basil soup

  • Step 1
    In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.
  • Step 2
    Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.
  • Step 3
    Reduce heat to low and simmer for 15 minutes or until vegetables are soft.
  • Step 4
    Ladle into bowls and garnish with fresh julienned basil. Serve hot.
