Found this simple recipe on the back of a can of tomatoes. I LOVE tomato basil soup, always order it in restaurants if they have it.

Ingredients

  • 1 Tbsp
    olive oil
  • 1 medium
    onion, chopped
  • 2 stalk(s)
    celery, chopped
  • 1 medium
    carrot, chopped
  • 2 clove
    garlic, minced
  • 2 can(s)
    (14.5 oz.ea.) diced tomatoes, undrained
  • 1 tsp
    dried basil, crumbled
  • 3 c
    reduced sodium chicken broth
  • ·
    salt and black pepper to taste
  • 8
    fresh basil leaves, julienned

How to Make CHUNKY TOMATO BASIL SOUP

Step-by-Step

  1. In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.
  2. Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.
  3. Reduce heat to low and simmer for 15 minutes or until vegetables are soft.
  4. Ladle into bowls and garnish with fresh julienned basil. Serve hot.
